Brujería
This drink (which means “witchcraft” in Spanish) is in the French ‘75 family, which also contains the Old Cuban (rum, lime, syrup, bitters, champagne). I chose the name because of the Old Cuban inspiration and inclusion of Strega (which means “witch” in Italian). Still with me?
I kept the white rum base, but brought in a cava coffee syrup (see post from 12/15/23). You could probably get by with simple syrup infused with coffee beans, but the extra/concentrated cava flavor helps to bring forth some of the nuanced elements of the sparkling wine. The Strega fits in nicely here, adding its botanicals and hint of anise without dominating. A nice dry sparkling wine works best here, else I would up the lemon juice a bit.

Recipe
1.25oz white rum (@eldoradorums 3 year)
0.5oz cava coffee syrup
0.25oz Strega (@strega1860usa)
0.25oz lemon juice
2oz dry sparkling wine
Shake first four ingredients with ice until chilled. Strain into champagne flute, top with sparkling wine, garnish with lemon peel and (optional) coffee bean. Cheers!!
