Need A Vacation
Okay, we’re getting to that point in winter when a vacation sounds really nice. Not that I have to deal with any snow or anything😆 But regardless, this is a great tropical-leaning old fashioned that’s hard not to like. It’s admittedly a riff on myself (“Still on Vacation”, 5/18/22), but if you still haven’t tried it, a little bit of pineapple juice in a stirred drink is incredible. Yeah yeah all you purists out there, I didn’t come up with the concept but I’m happy to debate its merits.
I actually made this one for a group, and having batched cocktails is clutch if you want to serve multiple guests and not spend the whole time making drinks. See below for batching instructions. I would overestimate the number of drinks you may need because we went through this one way quicker than anticipated. I mean, pineapple and coffee will always be delicious no matter how you wrap it up.
Recipe
1.5oz bourbon whiskey
0.5oz pineapple rum
0.5oz coffee liqueur
5-6 drops tiki bitters
0.25oz pineapple juice
1tsp whole coffee beans
Combine all ingredients and sit for ~3 minutes. Stir, strain over large ice. Express/discard lemon twist. Garnish with dehydrated pineapple.
For batching, I added 1.25oz water for 6 servings, held pineapple juice, and did the coffee bean rapid infusion/strain/bottle and refrigerate. At time of serving, I added the juice and stirred briefly. Cheers!!
