Trust The Process
As promised, this post is a continuation of my last one, making a cocktail built around the syrup I discussed. While I highly recommend this syrup and the resulting drink, the bigger points here are 1) Consider making a syrup instead of throwing out overripe produce, 2) It’s not too complicated to make said syrup, 3) These spontaneous syrups can be a great launching point for new cocktails.
I cheated a bit on this drink because I have the perfect gin to pair with the syrup. It has notes of cilantro and is potent (in herbal flavor and ABV, 47%) and is just a fantastic gin (thanks to @old_harbor for sending!). I accent the earthy vegetal notes a bit more with mezcal, and a deep herbaceous edge with the chartreuse, and round it all out with fresh lime juice. It’s hard to convey just how nicely this drink came together!
Recipe
- 1.25oz modern-style gin (@old_harbor San Miguel, gifted) 
- 0.5oz mezcal (@mimamamedijomezcal) 
- 0.25oz green chartreuse (@chartreuse1605) 
- 0.75oz strawberry pepper cilantro syrup 
- 0.75oz lime juice 
Shake with ice until chilled, fine strain into coupe, garnish with fresh cilantro. Cheers!!
