Hatch Chili & Peach Shrub

Recipe

  • 1 large peach, fine chop

  • 1 hatch chili, deseeded and finely chopped

  • 2/3 cup cane sugar

  • 1/4 cup peach balsamic vinegar (can sub white balsamic)

  • 1/4 cup white wine vinegar

Combine peach, chili, and sugar. Muddle, cover, refrigerate overnight. Strain solids through fine mesh strainer and add vinegar (can add/subtract to taste). Bottle and refrigerate.
