Plumcot Liqueur


Recipe

Lightly muddle 300g sliced plumcots with 125g cane sugar, let sit in refrigerator for 24-48hr. Strain and set aside.

Infuse 225g sliced plumcots in ~8oz vodka for ~48hr. Strain. Lightly squeeze remaining plumcots with cheesecloth and pass through strainer.

Combine vodka infusion and syrup to taste. I used all the vodka (final yield ~6oz or 180g) + 130g syrup (leaving me ~80g of extra syrup).

The liqueur is a bit cloudy but will settle (and can be re-strained) with time.
