Falernum Shrub


Recipe

First, make oleo saccharum: take the peels of 3 medium limes and 1 medium lemon, pith removed. Muddle with 1/2 cup of cane sugar and 2 inch section of fresh ginger, minced. Let sit at least 24hr, stirring once or twice.

Next, make almond milk. Soak 130g unsalted/unroasted almonds in water for 30 min. Drain, coarsely grind in food processor with a little water if necessary. Add ground almond mixture to 210g water (subtracting out any water added while grinding). Let sit for 1hr, then squeeze through cheese cloth. For best results, add almond mixture back to water and repeat this step.

Add almond milk to oleo mixture, stir to incorporate, and strain.

Toast ~2g whole cloves, 1/2 cinnamon stick, 1g whole allspice, and 1/2 star anise on stove until fragrant, infuse in almond/oleo mixture at least 24 hours, or longer to taste. Strain mixture.

To clarify: slowly add mixture to whole milk in a 4:1 ratio (should be ~2oz milk). Let sit overnight and then strain through coffee filter. Bottle and refrigerate.
