Strawberry Rhubarb Shrub

150g fresh rhubarb, chopped
150g fresh strawberries, hulled and chopped
100g white sugar
100g cane sugar
1 large lemongrass stalk, minced
1/3 cup white wine vinegar
Muddle strawberry and rhubarb with the sugar. Add lemongrass and stir. Let sit in the refrigerator overnight. Pass mixture through fine mesh strainer. Add vinegar. Bottle and refrigerate.
