Sweet Tea Cordial
Recipe
500g water
250g cane sugar
10g fresh mint sprigs with stems
Peels of 3 lemons, pith removed
2 family sized bags of black tea (eg Lipton)
4g diced lemongrass
1/2 tsp coriander seeds, lightly toasted
2 green cardamom pods, lightly toasted
Combine ingredients in vacuum seal bag and place in sous vide at 165F for 80min. Remove and place in ice bath to bring to room temperature. Strain, then pass through a coffee filter. Bottle and refrigerate.
