IPA Syrup


Recipe

Combine 125g cane sugar and one hop-forward beer (the hoppier, the better!) in a medium saucepan. Cook on medium-low heat, not allowing the mixture to reach beyond a low simmer. Reduce by ~50-60% by weight. Remove from heat and allow to cool to room temperature. Depending on the choice of beer, the syrup may benefit from a small amount of citric acid for brightness (~0.5g).
